How Serve Legal can help
The Risk
In the UK it is a criminal offence to sell food past its use-by date. Councils and local authorities have issued high-profile, multi-million-pound fines to retailers who failed to control out-of-date stock. Beyond the legal risk, selling expired products undermines customer welfare, damages trust and attracts negative media coverage. Relying solely on busy store teams leaves too much to chance.
How Serve Legal Helps
Serve Legal’s Date Check Audits put an extra layer of protection around your operation. Our trained auditors visit your sites and carry out a detailed review of products on sale – chilled cabinets, frozen aisles, ambient shelves, promotional ends and back-of-house where appropriate. They locate and remove any out-of-date items, and flag short-dated stock that needs urgent action.
Every visit is recorded in a structured report showing where issues were found, which categories are most at risk and how individual sites compare. This gives you hard evidence of due diligence and a clear view of operational gaps long before an environmental health officer or trading standards team walks through the door.
We already run date-check programmes for major retail and hospitality clients across the UK and Ireland, helping them tighten store routines, reduce waste and avoid enforcement action.

Our success stories
In 2024, a nationwide café chain partnered with Serve Legal to run a joint programme covering allergen compliance audits and Date Check Audits across its estate. Our auditors regularly visit sites to test how allergy requests are handled in practice and to sweep shelves, fridges and displays for out-of-date or short-dated products.
The programme has helped the client strengthen its customer experience, showing visitors that allergy concerns are taken seriously and that food on offer is safe to consume. Detailed reports provide clear evidence of due diligence in allergen management and stock control, which the brand uses in internal reviews and external conversations about customer welfare. By taking on this layer of checking, Serve Legal has reduced operational pressure on store teams while giving the business greater confidence in its standards.

About us
In early 2006, Ed Heaver and Julian Sargeson were alcohol retailers with a problem. The local authority had decided one of their sites was consistently serving underage people.
They wanted to check their staff, measure the site performance and demonstrate to the authority they were taking the issue seriously. They couldn't find a company providing a cost-effective service, so they decided to do it themselves.
The business has since grown to become the market leading provider of compliance auditing services in the UK & Ireland, and a leading voice in the conversations around age-verification and food allergy policy.
Our Customer Experience Allergen audit has been designed in collaboration with an experienced Environmental Health Practitioner and is approved by Trading Standards.
